Pineapple Coconut Bread (breadmaker)

Ingredients
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup sugar
2 large eggs
1/2 cup skim milk
1/2 cup pineapple chunks
1/4 cup pineapple juice
1/2 cup sweetened coconut flakes
1 tsp vanilla
1 tsp vodka

Method
  • Follow your breadmaker instructions for a Quick bread.
  • When the bread is done, allow it to cool uncovered in the fridge for 30 minutes before attempting to remove it from the pan.
